Sauteed spinach with orange and almonds

This dish is generally made with spinach or mallow, which grows wild in the countryside and is picked for vegetable dishes and soup. Quite often you will come across makeshift stalls selling bunches of mallow by the dusty roadside.

INGREDIENTS


  • 500 g fresh spinach leaves, thoroughly rinsed and drained
  • 2–3 tablespoons olive oil plus a knob of butter
  • 1 onion, roughly chopped
  • 2 garlic cloves, finely chopped
  • freshly squeezed juice and rind of 1 orange
  • 2 tablespoons flaked almonds, toasted
  • sea salt and freshly ground black pepper

METHOD

Sautéed spinach with orange and almonds
Put the spinach in a steamer and cook for 8–10 minutes, until soft. Tip the cooked spinach onto a wooden board and chop it to a pulp. Set aside.
Heat the oil and butter in a heavy-based saucepan. Stir in the onion and garlic and cook until they begin to color. Add the spinach and mix until thoroughly combined. Add the orange juice and rind and season to taste with salt and pepper. Tip the spinach into a serving dish and garnish with the toasted almonds.
